Press and drag in the canvas area surrounding the model to orbit the camera.
The ZBrush default orbit rotation axis is set to Rot XYZ. You can customize your experience by changing the rotation orientation axis to prioritize individual axes.

This behavior is linked to the Allow Roll Gesture setting and is disabled by turning off Allow Roll Gesture in the User Settings > Navigation > Multitouch menu.
