Here the geometry of the separated polygons is output. This is only the part of the original geometry defined via the selection options of the Node.

Remainder

Here you get the unselected part of the original geometry. By connecting the separated geometry and this remaining part of the geometry, you will get back all the polygons of the originally inserted geometry.
